Zucchini Bread


Ingredients:
  • 3 eggs
  • 2 cups sugar
  • 2 cups grated zucchini
  • 1 cup oil
  • 3 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoons cinnamon
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon nutmeg

1. Wash and grate zuchinni, and set aside. Mix eggs, sugar, zucchini, oil, and vanilla.

2. In a separate bowl, mix combine flour, salt, soda, cinnamon, baking powder, cloves and nutmeg. Stir with a whisk to add a little air.

3. One spoonful at a time, add the dry ingredients to the wet ingredients.

4. Put into 2 greased bread pans (or 4 mini loaf pans), and bake at 350 degrees for 1 hour or so.
